Salmon Salad

Howdy lil’ squirmies. This is really hard to say – and hard to admit to. But Apartment Food Hobos is being rescuscitated. It feels freaky to even type this. So I’m not going to offer a pre-amble or anything like that, I’ll try to just jump right into things.

Here be an Australian take on modern Italian. Salmon torn into chunks with a citrusy dressing. Black olives, tomato and Italian parsley adding to the mix. This went with an Italian chianti. Well, I mean– I dont know if it “went” with it, but I served it with it.

Its hard being a food hobo in Texas. I went to the local supermonster for some rhubarb to make my dessert, and sadly they did not even have rhubarb on the shelves. I quietly cursed this shithole of a town and went on my merry way. Oh just kidding, I love this dump.

Salt and Pepper Oven Fries

  • Baking potatoes, cut into strips
  • Olive oil
  • Sea salt
  • Schichimi Togorashi or a tiny, tiny bit of cajun seasoning
  • Sugar
  • Combine all ingredients and back for just under an hour at 400F. Turn at 25 mins.

Fresh Salmon Salad with Chickpeas and Tomatoes

  • Salmon filet
  • Chopped tomatoes
  • Chickpeas
  • Italian parsley
  • Black olives
  • Fresh tangelo juice
  • Fresh lemon juice
  • Capers
  • Cook salmon in a heavy skillet in oil. Cool slightly. Combine all other ingredients and heat till warm in another skillet. Crumble salmon and combine. (Measure ingredients to taste)
